Outdoor Flatbreads on the Ember

Flatbreads are a forgiving first bake in the Ember. Soft centres, blistered spots, ready for hummus or grilled meat.

Ingredients (makes 8)

  • 300g plain flour, plus extra for dusting
  • 1 tsp baking powder
  • ½ tsp fine salt
  • 200g natural yoghurt
  • 1 tbsp olive oil

Method

  1. Mix flour, baking powder and salt. Stir in yoghurt and oil to a soft dough. Rest 20 minutes.
  2. Preheat the Ember. Divide dough into 8 balls and roll each into a thin oval.
  3. Bake on the hot stone 45-60 seconds per side until puffed and spotted.
  4. Keep warm in a clean cloth while you finish the batch.

Tip: Dust lightly with flour so they slide off the peel cleanly.
